The exact characteristics and properties of the knife
- Blade steel: X12MF (HRC 61-62) — X12MF refers to tool steels with outstanding wear resistance, high hardness and excellent cutting edge resistance. Such steel retains its sharpness for a long time even during intensive work on hard and fibrous products, which is especially important in the kitchen. However, high hardness means that steel is slightly less ductile and requires care when working with very strong or bony ingredients.
- Blade Shape: Drop Point is a universal geometry for kitchen tasks. The Drop Point shape guarantees convenience when slicing, chopping, thinning and other standard culinary techniques. This blade provides an optimal balance between control and efficiency at work, and it is safer to use it due to the lowered buttline.
- The blade thickness of 1.8 mm is an indicator typical for light and fast kitchen knives. This blade perfectly cuts through food, allows for fine slicing, and provides maneuverability when processing vegetables, fruits, fish, and poultry. However, overly harsh work on bones or frozen foods is not recommended.
- The blade length is 173 mm — optimal for daily use in the kitchen, both at home and in professional settings. This is a universal length for most culinary tasks, from slicing greens to butchering small carcasses.
- Handle: Black hornbeam and duralumin — Black hornbeam is famous for its durability, moisture resistance and aesthetics: deep color, pleasant texture. Duralumin inserts add elegance to the design, strengthen the nodal attachment zones, and increase the overall working life of the knife. Hornbeam is practically not afraid of moisture, does not warp with time, so the handle reliably serves for many years, even in an active kitchen.
- Sheath: Leather — handmade, natural material, pleasant appearance, protection of the knife during storage and transportation.
Application scenarios and key advantages
- Optimal task: It is convenient for daily kitchen work: slicing vegetables, fruits, fish, poultry, herbs, fillets, sausages and cheeses. It does an excellent job with precise cutting and fine chopping.
- Grip reliability: The ergonomics of the hornbeam handle provides a comfortable grip for different palms, does not slip even during prolonged operation, and is well controlled even in wet conditions.
- Resistance to moisture and corrosion: X12MF steel has increased corrosion resistance compared to conventional carbon steels, but requires minimal maintenance (wiping the blade after work). Black hornbeam and duralumin are resistant to moisture, which is ideal for the kitchen.
- Wear resistance and durability: The knife is designed for years of intensive use without loss of sharpness, the cutting edge retains its performance qualities for a long time.
- Ease of maintenance: Steel X12MF requires the use of specialized water stones or diamond abrasives when sharpening, but sharpening will have to be extremely rare due to hardness and wear resistance.
- Aesthetics and uniqueness: Handmade, combining traditional materials and modern technologies, makes each product unique. Black hornbeam emphasizes status, and duralumin gives a modern accent.
Usage restrictions
-
It is not intended for chopping bones, opening frozen foods, or working on very hard materials. The thin blade and hard steel may chip the cutting edge.
- It requires careful handling: the high hardness of steel reduces ductility, so the knife is not used as a universal carpentry or hiking tool.
- Sharpening requires a certain skill or contacting professionals in tool steels.
Care recommendations
- It is recommended to wipe the blade and handle dry after each use.
- Avoid prolonged contact with acids and aggressive media.
- Use high-quality stones or diamond tools for sharpening.
- Keep in a leather sheath, avoiding getting the sheath wet.
Final conclusions and recommendations
This knife is the choice for the discerning chef, home enthusiast, and collector who appreciates the combination of handmade, exquisite materials, and professional performance. It is ideal for daily cooking, thin slicing, delicate work with any products. A real treat for those who appreciate aesthetics, convenience and cutting qualities in one product. Not suitable for heavy chopping tasks or work outside the kitchen.
